Background: Chicken Ovalbumin is the maior protein in the "white" of the egg (and afavorite antigen in immunoloqical research). Egg white contains a variety ofproteins including ovalbumin, conalbumin, ovomucoid and lysozyme. It belongsto the serpin family and the Ov serpin subfamily.Ovalbumin can cause anallergic reaction in humans.
Ovalbumin has been implicated in the development of the egg shelI.lmmunohistochemistry revealed that ovalbumin is found only in the mammillarybodies of decalcified shell, and is not distributed throughout the shell matriThese results indicate that ovalbumin is present during the initial phase of sheformation and becomes incorporated into the protein matrix of the mammillarbodies. However, it is not yet clear whether ovalbumin at this site playsspecific role in shell mineralisation.
